Anybody try to make black raspberry ice cream?

Postby notsoheavyd » Sun Aug 27, 2017 9:58 pm

Not sure if this is the right forum. Anyway I've used Alton's recipe for premium ice cream (Churn baby Churn 2) to make a few and now I want to make black raspberry for my niece.(Well ok, purple cow which she says is black raspberry with chocolate chunks.) Can I just take the vanilla base and just put in 1/2 cup to a cup of either black raspberry jam or frozen fruit and get something that would work? Just curious if anybody has taken a crack at this to modify it for that flavor.

Way back when I was a camp counselor we used to church ice cream with the campes. The kids were amazed by the process.

We did vanilla most of the time but if the group had been berry picking the berries often went into the churn as the ice cream was firming up. YUM!!

If you put the berries in too soo they will break up too much.

I think you idea of using frozen fruiqt is a good one.

If you want to send me a pint by FedEx, jsut write back for my address.

I've done a lot of fruit ice creams because they don't make them, which is silly. Tangelo was to die for! Anyway. You do indeed just add some fruit to a vanilla (or whatever flavor) base near the end of the churning cycle. How well you want it mixed determines when, whether you want streaks or to mix it completely. What I do with fruit is buy fresh (or frozen) and cook it down with a bit of sugar until it's thickened. With raspberries you have to deal with seeds so if you want them out then you can puree and strain them. I like to enhance it with a couple drops of the same flavor of ......... flavoring.

I don't care for whole frozen fruit but if you like it that way that would be easy, just dump the frozen ones in. They will still stain a light base so near the end with that too or you will change to color completely.

Hmm, that doesn't sound too bad. I'll give that a shot. I've had decent luck making the vanilla so it's not a big step. Admittedly I'd probably add it earlier because I want it really mixed in. I'll let everybody know how it turns out.

Well let's see, I made the vanilla ice cream as a base, split it in half and then added about 1/2 cup of black raspberry spreadable fruit since I couldn't actually find fresh raspberries then blended the hell out of it. Guess I'll find out soon enough how it is after I churn it.
