Last night our supper club met and our theme was Thai food. We usually have a sparkling wine with our hors d'oerves, but instead last night our host made us a cocktail called a "Thai Boxer". It was created by Scott Beattie at Cyrus in Sonoma.

I found several of his other recipes here but not an online source for this Thai Boxer which was delicious and refreshing.

Thai Boxer
Makes 1 drink (you'll want more, if you're like me)

10 thai basil leaves
10 mint leaves
10 cilantro leaves
1/2 oz. simple syrup
Ice
1 1/2 oz. vanilla spiced rum
1/2 oz. unsweetened coconut milk
1/2 oz. fresh lime juice
1 oz. ginger beer

In a cocktail shaker, muddle the basil leaves with the cilantro, mint and simple syrup. Add ice and the vanilla-spiced rum, coconut milk and lime juice and shake well. Strain and drink into an ice-filled highball glass and stir in the ginger beer. Garnish with basil sprig.

Marcia used regular basil and Morgan's spiced rum last night and it was delicious.
