At our supper club we usually have a sparkling wine with hors d'oerves, but this week our theme was "Caribbean" and our friends made this cocktail which was created for Norwegian cruise lines.

It tastes light and fun, but it sneaks up on you. :D

Yellow Bird

1 oz. Light Rum
1/4 oz. Galliano
1/4 oz. Creme de Banana
2 oz. Pineapple Juice
2 oz. Orange Juice

Combine ingredients in a highball glass filled with ice and stir. Garnish with lime slice.

I made a variant of the Yellow Bird, replacing the orange & pineapple juices with Pomegranate/Cherry mixture (which I use in Cosmos instead of cranberry juice). Excellent!

I've got a pitcher of yellow bird cocktails sitting in the fridge for the cook-out tonight. Light and fruity as I remember. It'll be the perfect drink while we're waiting for dinner to cook.
