TAKE A STAND: Round 10 - Ribs

Postby chefshawn » Tue Aug 03, 2010 5:57 pm

This one may be tricky, and i'm not 100% sure how to set up the poll, but i'm gonna keep it simple again. I'm gonna base this on smoked pork ribs, specifically, though i look forward to hearing the heated debate over the two dozen combinations of meats/animals/cuts/woods/sauces/etc.

Having a familiar sound/taste.

I prefer mine cooked to perfection with that tell tale smoke ring.

Animal: Pork

Cut: Ribs

Wood: Hickory

Sauce: On the side, thank you. :D

Naked, is that dry? They always look at me like I'm retarded when I order them with no sauce.

I'd have to answer spare. Baby backs are a delight, but I think spares have the fat & the flavor.

Spares, dry rubbed with a light (not too sweet) sauce glaze and sauce on the side.
