JAZZ’S TOMATO SAUCE

1 28-oz can whole tomatoes
4 cloves garlic
1 med. Onion
2ts salt
2tb sugar
2tb balsamic vinegar
1tb oregano
2ts thyme
2ts basil
1tb olive oil
1tb tomato paste

Mince garlic & onion & sauté in olive oil.

Break the tomatoes a little in the pan but not too much. It's key to keep
them mostly whole.
Simmer for a good 30-45 min.

When done simmering (reduced by about 1/4) take a stick blender and give it a buzz.
Keeping the tomatoes mostly whole up to this point keeps a bit of the fresh
tomato taste for the end.
