ALLGAUER SPATZLE (DUMPLINGS)
3-1/4 cups sifted flour
4 eggs
3/4 cup water
2 teaspoons salt
1 cup grated Swiss cheese
1 cup finely chopped onions
Combine flour, salt, eggs and water to make a heavy dough. Place dough in spatzle machine. Drop the dough into boiling water (4-quart kettle filled half-full of water). Cook 2 to 4 minutes. Dumplings will rise to top when ready to eat. Put a layer of spatzle on a plate, cover with a layer of Swiss cheese. Add another layer of dumplings, a second layer of cheese, and so on until all dumplings have been used. Meanwhile, have a cup of chopped onions browning in butter. Pour this mixture over final layer of spatzle. The cheese will melt and the dish is ready to serve.
