QOTD 8/8: Put it together, and what have you got?!

Postby Chef Mongo » Wed Aug 08, 2012 7:14 am

You are presented with a plain saltine cracker. That cracker is just begging for something atop it. However, you have no cheese. You DO have a key to Chefshawn's Magical Meat Vault, wherein you can find any sausage, pate, potted meat or other meaty goodness. What two things do you take from the Vault to put on your cracker?

jalapeno mustard, and this awesome sausage from a Russian market in Boston called Pockwurst, which I specifically bought because it was shaped like a pig.

I'd show you the plate I'd put such on, but that's another thread.

Crap...didnt catch that it was plain saltines that I was dealing with.

First, I'd attempt again the 6 in a minute challenge.

After that, I'd have to seek out some canned meats, sardines, spam, potted meat, inthat order.

I too would have to go with sardines packed in hot sauce.

Sardines, peanut butter, maybe a little good ham. Tabouleh? Without making any big deal about it, I have tried to cut back on salt and now saltines taste very, very salty to me. the salt-free tops are OK, but there must be something similar that is lower in salt.

Any ideas?

Glad to see that Chefshawn has seafood in his
magic locker. I've gone meatless for 18 days now.

I'd break a jumbo lump crab cake into bite size
pieces and top with a small dollop of cocktail sauce.

I don't think I would. I've never served meat and crackers, only cheese and dips. Now I can't eat processed meats so salami and anything else good is out anyway. I used to like salami and cheese.....Tuna is about the only thing I eat with saltines. Low sodium tuna and a little Miracle Whip/Greek yogurt.

A water cracker would be better than a saltine for this stuff, but it is salty heaven on a cracker.

If it must be a meat product (one can never go wrong with cheese, imho), then I would spread some nice chopped liver (chicken) on it.

You can get Wheat Thins and Ritz in reduced salt versions.

Definitely peanut butter, maybe with jam also. And a glass of milk.
Or with ginger ale when one is really under the weather.

I'll still pick stone ground wheat crackers to go with sardines, but I could do saltines if they were low or salt-free. Saltines are just a nostalgic eat -once-a-decade food for me. Just thinking about them can make me feel good. Maybe because I last had them with dad.

I haven't had Underwood potted meat in about 40 years, but I can't resist recommending it. Oh, 2 things? Potted meat & jack cheese.
(Wonder if I still have a coupon for Spam? I was going to put the can in an emergency pack.)

Aww, Shawn, go easy on us older folk! How's your lower fat, sugar and salt /anti-diabetes diet going? Honest question; I hope well!
Oh. Yep, you're right, I could just read your blog. :D

tj, that's why I like water crackers and low-salt stone ground crackers. They're unassertive; don't compete with what you eat them with. Ritz or similar? I eat them for dessert, like cookies, with or without pnut butter and with a glass of milk. Glad I splurged on them, they were very good.

I never said anything about lower fat.

I have, however, pretty musch stripped my diet of processed carbs. I actually don't have any of the indulgences mentioned in this thread currently in my house, except the sardines, and a few triscuits left from our "treat night" earlier this week.

I'm doing surprisingly good.

Glad to hear it, Shawn. Since diabetes is such a pain to deal with, I hope that you will be able to keep the monster at bay. Do you check your blood sugar regularly? If not, ask the doc to write a prescription for the meter and strips to keep the cost down and go to it. Elementary, but effective tool.

Cardboard, yeah, sorta. Not only here, but elsewhere recently, I have come across the idea the Americans like tasty crackers and bland cheese and Europeans like bland crackers and tasty (stinky, blatant?) cheese. I think I am a closet European at times. Carla, I'm with you about the water crackers and lo-salt stoned wheat [which always remind me of the smirks over the name when they first came on the market] being favorites. I also use matzohs sometimes.

I defend sardines as a great source of protein and omega-3's and find it hard to develop food guilt over eating them once in a while. AB sure has it right about them being a traveler's friend. Compact and powerful!

Sardines packed in tomato sauce and the duck liver mousse from this place.

Not a big saltine fan, though - I prefer table water crackers or Ritz-type.

Saltines? Plain ole Skippy smooth peanut butter, or salted butter. Maybe a nice summer sausage.

I can't eat stuff with saltines, they're far too bland. If I'm combining a cracker with meat, it has to have a lot more flavor than that. If I'm forced to eat a saltine with anything, it's usually only ice-cold butter.
