what size pastry tip do you use to make eclairs? he never specifies in the episode except for a #12 tip for funnel cake. the eclairs look slightly larger than the piped funnel cakes...

Depends on how big you want them. I don't recall what he used, but I'd use an open coupler or no tip at all.
